Apple Orchard Glow-Up Salad

  • About 4 hungry humans or 6 polite salad nibblers serves

  • About 15 minutes from chopping to crunch time (Unless you want to chill with it)

Ingredients

  • 1 cup Shrubadee Apple Cardamon Shrub
  • 1/4 cup Extra Virgin Olive Oil
  • 1 tsp Dijon Mustard
  • Pinch of Salt & Black Pepper
  • 6 cups Kale
  • 1 Large Honeycrisp -or- Granny Smith Apple
  • 1/2 cup Pecans -or- Walnuts
  • 1/4 cup Dried Cranberries
  • 1/4 cup Crumbled Cheese - Feta, Goat, or Sharp White Cheddar (Optional)

Make the Apple Cardamom Vinaigrette

  1. Grab a small bowl or jar and whisk together:
    1 cup Shrubadee Apple Cardamom Shrub, extra virgin olive oil, Dijon mustard, and a pinch of salt and pepper.

  2. Taste it. Smile. Maybe brag a little. Your vinaigrette is officially vibing.


Build the Salad

  1. Massage the Kale:
    Add the chopped kale to a big bowl. Drizzle in about half of your vinaigrette.
    Use clean hands and give the kale a gentle two to three-minute massage until it softens and turns deeper green.
    (Yes, the kale deserves a spa moment.)

  2. Add the Good Stuff:
    Toss in your sliced apple, toasted nuts, dried cranberries, and crumbled cheese if you are feeling a little extra.

  3. Dress It Up:
    Pour the rest of the vinaigrette over the top and toss everything together until every leaf, nut, and apple slice is living its best dressed life.

  4. Let It Chill (Kind of Optional, Definitely Recommended):
    Let the salad rest for 10 to 15 minutes for peak flavor and tender kale. It is worth the wait.
